Christmas Biscuits

   Cream the butter and caster sugar in a mixing bowl with a wooden spoon, then mix in the egg yolk.

   Sieve in the flour and mixed spice and mix until well combined. Stir in the dried fuit.

   Roll out to around 5mm thick and cut into circles with a fluted cutter.

   Bake at 160C for 20-25 minutes until lightly browned.

   Remove from the oven and immediately sprinkle with a little extra caster sugar. Cool on a rack.
