Ingredients

  • 190 g butter
  • 125 g caster sugar (plus extra for sprinkling)
  • 1 egg yolk
  • 290 g plain flour
  • 2 tsp mixed spice
  • 30 g raisins
  • 30 g dried cranberries

Method

  • Step 1   Cream the butter and caster sugar in a mixing bowl with a wooden spoon, then mix in the egg yolk.
  • Step 2   Sieve in the flour and mixed spice and mix until well combined. Stir in the dried fuit.
  • Step 3   Roll out to around 5mm thick and cut into circles with a fluted cutter.
  • Step 4   Bake at 160C for 20-25 minutes until lightly browned.
  • Step 5   Remove from the oven and immediately sprinkle with a little extra caster sugar. Cool on a rack.
