Christmas Biscuits

Similar to Easter biscuits, these biscuits have a delicious festive smell and taste.
Serves 8
Ingredients
- 190 g butter
- 125 g caster sugar (plus extra for sprinkling)
- 1 egg yolk
- 290 g plain flour
- 2 tsp mixed spice
- 30 g raisins
- 30 g dried cranberries
Method
- Step 1 Cream the butter and caster sugar in a mixing bowl with a wooden spoon, then mix in the egg yolk.
- Step 2 Sieve in the flour and mixed spice and mix until well combined. Stir in the dried fuit.
- Step 3 Roll out to around 5mm thick and cut into circles with a fluted cutter.
- Step 4 Bake at 160C for 20-25 minutes until lightly browned.
- Step 5 Remove from the oven and immediately sprinkle with a little extra caster sugar. Cool on a rack.
