Ingredients

  • 2 litres cider
  • 50 ml dark rum
  • 1 large orange
  • 1 apple
  • 12 whole cloves (or 1 tsp ground cloves)
  • 3 cinnamon sticks (or 3 tsp ground cinnamon)
  • 0.5 nutmeg
  • 1 tsp allspice
  • 2 star anise
  • 0.5 vanilla pod (or 1tsp good vanilla extract)
  • 5 tbsp demerara sugar

Method

  • Step 1   Put the cider and rum into a large saucepan or pot.
  • Step 2   Squeeze in the orange juice, then stud the cloves into small slits in the orrange skin. Chop the apple (including skin) into chunks and add to the liquid. Grate the nutmeg into the mixture.
  • Step 3   Add the remaining ingredients and heat at a very low simmer for at least 20 minutes before serving. Ensure it does not boil at any point.
