Salsa Verde

This minty salsa verde goes particularly well with roast lamb - the only trouble with it is that it encourages you to eat more lamb so you can get more of the salsa! It is sadly impossible to communicate the amazing flavours via photogaph!
Serves 6
Ingredients
- 2 cloves garlic
- 12 g fresh basil
- 25 g fresh mint
- 25 g fresh coriander
- 5 small gherkins
- 5 anchovy fillets
- 1 tbsp white wine vinegar
- 4 tbsp olive oil
- 1 tbsp Dijon mustard
Method
- Step 1 Finely chop the garlic, herbs, gherkins and anchovies, and put into a small mixing bowl.
- Step 2 Add the mustard and vinegar. Slowly stir in the oil until combined smoothly.
- Step 3 Season with salt and freshly ground black paper. Taste and adjust if necessary.
