Ingredients

  • 2 cloves garlic
  • 12 g fresh basil
  • 25 g fresh mint
  • 25 g fresh coriander
  • 5 small gherkins
  • 5 anchovy fillets
  • 1 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 tbsp Dijon mustard

Method

  • Step 1   Finely chop the garlic, herbs, gherkins and anchovies, and put into a small mixing bowl.
  • Step 2   Add the mustard and vinegar. Slowly stir in the oil until combined smoothly.
  • Step 3   Season with salt and freshly ground black paper. Taste and adjust if necessary.
