Smokey Bean Wraps

Use dried beans if on a budget (soak overnight then boil - look up instructions). Can also be served on baked potatoes or with flatbreads. Optionally at cheese.
Serves 4
Ingredients
- 3 tbsp olive oil
- 2 onions (chopped)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp soy sauce
- 1 red chili (deseeded, chopped)
- 1 tin cannolini beans
- 1 tin kidney beans
- 1 tin chopped tomatoes
- 1 tin sweetcorn
- 1 tbsp maple syrup
- 1 pinch ground black pepper
- 4 large brown wraps
Method
- Step 1 Gently fry the onions in the oil until soft.
- Step 2 Add the spices, soy sauce, chili and stir for 1 minutes. Then add the tomatoes, beans, sweetcorn, maple syrup and season. Bring to the boil and simmer until slightly thickened - 5 to 10 minutes.
- Step 3 Add additional freshly ground black pepper to taste, and service in warmed wraps.
