Ingredients

  • 1 kg cooked chicken (remove skin)
  • 800 g cooked rice
  • 200 g mayonnaise
  • 4 tbsp Greek yoghurt
  • 4 tbsp mango powder
  • 2 tbsp mild curry powder
  • 1 lime (zest & juice)
  • 1 small handful chopped coriander
  • 6 tbsp sultanas
  • 1 pinch seasoning (salt & pepper)

Method

  • Step 1   Combine all the ingredients except the chicken and rice. Then stir in the chicken and rice. Serve in baguette, sandwiches or with baked potato.
