Delicious accompaniment to a Christmas Day turkey. Equally good with chicken for a Sunday Roast. Serves 8.

Ingredients
- 1 onion (whole, peeled)
- 10 cloves
- 1 pint milk
- 100 g fresh white breadcrumbs
- 50 g butter
- 1 pinch salt
- 1 pinch freshly ground pepper
Method
- Step 1 Stud the onion with the 10 cloves and put into the milk in a medium saucepan. Heat and then gently simmer for 10 minutes. Leave overnight.
- Step 2 Remove the onion, add the breadcrumbs and cook slowly until the crumbs are absorbed into the milk to form a thick sauce; around 15 or 20 minutes. Avoid boiling.
- Step 3 Add the butter and seasoning. Keep warm between the other saucepans if there is space, until ready to serve.
