Coated Chicken Quarters 'Roast' Dinner

Quick and easy alternative to a Sunday Roast. Serve with carrots & broccoli, or vegetables of your choice.
Serves 4
Ingredients
- 4 chicken quarters
- 4 medium potatoes (peeled and halved)
- 2 medium onions (quartered)
- 1 tbsp smoked paprika
- 0.5 tbsp ground cumin
- 0.5 tbsp caster sugar
- 1 tsp tumeric (optional)
- 1 tsp salt
Method
- Step 1 Cut the chicken quarters into drumstick and thigh (or ask your butcher to do it).
- Step 2 Pre-heat the oven to 210 degrees
- Step 3 Make up the coating of parprika, cumin, tumeric and salt, and coat the chicken with it.
- Step 4 Meanwhile par-boil the potatoes for 5 minutes after coming to the boil.
- Step 5 Put the coated chicken, potatoes and onion quarters into a baking dish.
- Step 6 Cook for 20 minutes at 210, then a further 190 degrees for 20 minutes. Ovens vary, so if the chicken is looking too brown towards the end then cover with foil, and if not quite cooked at the end cook for another 5 minutes.
