Fish Pie

Ingredients
- 400 g haddock
- 300 ml milk
- 1 bay leaf
- 1 onion (sliced)
- 65 g margarine
- 3 tbsp flour
- 150 ml single cream
- 2 boiled eggs (chopped)
- 1 handful fresh parsley
- 90 ml milk
- 900 g potatoes (cooked & mashed)
- 1 egg (beaten)
Method
- Step 1 Cook the fish in milk with bay leaf and onion slices. Simmer for 8-10 minutes.
- Step 2 Lift out the pan and flake the fish (keeping the milk).
- Step 3 Melt margarine in saucepan, stir in flour, and heat for 1 minute.
- Step 4 Gradually stir in the milk you kept. Bring to the boil slowly and stir until sauce thickens.
- Step 5 Stir in cream and fish, add chopped egg and parsley.
- Step 6 Spoon mixture into oven-proof dish. Place mashed potato on the fish mixture.
- Step 7 Cook in oven at 200C for 10-15 minutes.
- Step 8 Brush beaten egg over pie, and cook for a further 15 minutes.
