Ingredients

  • 1 large onion (chopped)
  • 3 tbsp butter
  • 1 pint water
  • 3 tbsp white wine (optional)
  • 1 salt (to taste)
  • 1 tsp ground pepper
  • 1 Fresh herbs or parmesan (to serve)

Method

  • Step 1   Sauté onion in butter until onion is slightly caramelised.
  • Step 2   Add seasoning.
  • Step 3   Add wine and reduce slightly.
  • Step 4   Add half the water and simmer for 1 hour, topping up the water from time to time.
  • Step 5   Taste and season as necessary.
