One-Hour Onion Soup

Delicious to keep away tummy rumbles whilst you are waiting for the main course to cook!
Serves 2
Ingredients
- 1 large onion (chopped)
- 3 tbsp butter
- 1 pint water
- 3 tbsp white wine (optional)
- 1 salt (to taste)
- 1 tsp ground pepper
- 1 Fresh herbs or parmesan (to serve)
Method
- Step 1 Sauté onion in butter until onion is slightly caramelised.
- Step 2 Add seasoning.
- Step 3 Add wine and reduce slightly.
- Step 4 Add half the water and simmer for 1 hour, topping up the water from time to time.
- Step 5 Taste and season as necessary.
