Rich Beef Lasagne

Glenda's recipe - the wine makes for a richer sauce. Serve with a fresh green salad.
Serves 4
Ingredients
- 1 lb mince
- 1 tbsp olive oil
- 3 rashers smoked bacon
- 2 onions
- 1 large clove garlic
- 2 heaped dessert spoons tomato puree
- 2 tbsp plain flour
- 1 tin tomato
- 2 tsp mixed herbs
- 2 bay leaves
- 2 sprigs fresh thyme (small)
- 0.75 tsp salt
- 1 pepper (to season)
- 0.33 bottle red wine
- 1 packet ready cooked lasagne
- 50 grated parmesan
- 30 g butter
- 1 tbsp flour
- 1 pint milk
- 50 g cheddar cheese (grated)
Method
- Step 1 Brown mince in oil, then add the bacon, onion and garlic
- Step 2 Add tomato and flour to soak up the juices.
- Step 3 Add tinned tomatoes, mushrooms and wine.
- Step 4 Bring to the boil and simmer for about 20 minutes on low until cooked.
- Step 5 Prepare the cheese sauce by melting the butter, stirring in the flour, heating for a minute, then adding the milk at little at a time. When brought back to the boil add the cheese and simmer over a very low heat for 3 minutes.
- Step 6 Put layers: meat, lasagne, cheese sauce, meat, lasagne, cheese sauce, then put grated cheese on top.
- Step 7 Cook at 180C (GM6) until brown (approximately 40 minutes).
