Sweet and Sour Pork

Also very nice with pasta or couscous instead of rice.
Serves 6
Ingredients
- 500 g pork shoulder steaks (cut small)
- 1 salt & black pepper
- 1 tbsp olive oil
- 1 large onion
- 1 red pepper
- 1 tin pineapple
- 1 tbsp tomato puree
- 3 tbsp soy sauce
- 3 tbsp sugar
- 1 juice pinapple (from tin)
- 2 tbsp vinegar
- 350 g rice
Method
- Step 1 Put pork, seasoning, vinegar, brown sugar and soy sauce in a shallow dish, cover and refrigerate overnight.
- Step 2 Heat butter in a pan and fry well drained pork strips gently until browned.
- Step 3 Add remaining ingredients.
- Step 4 Cover and simmer 30 to 35 minutes.
- Step 5 Meanwhile, cook the rice.
